Peanut Butter Chocolate Rice Crispy Treats

Was I offended when at a family gathering my husband whispered to me "Babe, you are really eating a lot of those rice crispy treats...maybe you should slow down, I don't want you to get sick"? Yes, yes I was. Did that make me want to stop eating the delicious morsels of goodness? No, no it did not. I hate to admit this but I certainly ate more than my fair share. Please don't judge me. Peanut butter chocolate, gooey, buttery, these things are really truly dangerous for me. I'm sure you'll understand when you try this recipe. The most horrible part of these treats is how easily they come together. Literally in minutes they are cooling on your kitchen counter begging you to have a taste. So good luck, make with caution, but most importantly if you're planning on eating a whole bunch, don't do it in front of your husband.

Peanut Butter Rice Crispy Treats: 

1/2 cup butter (1 stick)
1 cup light corn syrup
1 cup sugar
1 cup peanut butter
8 cups rice krispies
6 oz. chocolate chips
6 oz. butterscotch chips

Melt butter. Add corn syrup and sugar. Bring just to a boil and remove from heat. Be sure not to cook this mixture too long, other wise your rice crispy treats will be as hard as a rock, take it off the heat just as bubbles start to form around the edge of the pot. Stir in peanut butter. Add rice krispies and mix well. Press mixture into large baking sheet (11X17). Melt the chocolate and butterscotch chips in the microwave on high for 2 minutes. Stir. Continue microwaving for 30 second spurts until chips are melted. Spread chips on top of rice krispie mixture. Let chocolate set. Cut into squares and enjoy!

Idaho Weekend

 This weekend we traveled to Idaho (Rexburg/Idaho Falls to be exact) for these cool kids graduation. Adams brother, Scott and his wife, Christie graduated from BYU Idaho and although we didn't make it to the actual ceremony (stupid I-15 traffic) we did make it in time to snap a quick picture in their robes. 
 On Saturday we had a big bar b que in their honor. We of course ate tons of good food and enjoyed an afternoon with family.
 Adam, Scott, and their two younger brothers Ben and Josh were in charge of the grill. Adam explained the how deadly important (see faces below) the task  of manning the grill is. He made everyone an honorary grill mate to the grill master.
 Everyone had a lovely afternoon chatting and eating.
We took a few family photos and of course had to get in the mandatory crazy face picture. 
 Adam tormented his siblings and we had lots of fun being silly and goofing around.

 That evening my love and me fed the ducks stale bread on the river banks at the Idaho Falls Temple.
The weekend was relaxing and full of great memories.

Food Adventure: Idaho

Really, if you have a problem with strips of potato fried to a crispy golden brown, sprinkled with salt, and served with some type of dipping sauce, you should probably stop following this blog. If you're not a "fry fan", seek psychological help. Please. It's for your own good. Because seriously I've never met a french fry I didn't like (aside from the occasional cold batch from Wendys).  It's no secret I love french fries, so naturally I was looking forward to partaking of the state food of Idaho: the potato. Of course I planned to seek it out in my favorite form, and seek it out I did. I read about the amazing, famous house cut waffle fries from the Snakebite restaurant in downtown Idaho Falls. On their website they boast about using fresh Idaho potatoes, so I knew we had to try them. The restauant itself is in a cute historic neighborhood and is totally eclectic - exposed brick, tile mosaic flooring, cool local art... it was the perfect environment to enjoy a plate of fries. We ordered a plate of "Mesa Falls Fries", a local favorite according to the menu. After my first bite I totally see why. They're addicting. I just couldn't stop eating. I mean really I could have eaten the entire plate. The fries were really crunchy with lots of texture, and the soft "potato-y" inside was not to be overlooked. My favorite pieces were the ends. They were extra thick, and so yummy. Adam liked the really crunchy pieces, and all of the tiny middle tid-bits that were left over after cutting the potatoes into the waffle shape. The fries came with ketchup and fry sauce. As a Utah girl, I couldn't pass up my fry sauce. I like to think the french fries were just that good because they were made from fresh Idaho potatoes. There's a reason why Idaho potatoes are famous and are used in homes and restaurants all over the WORLD. They're just plain good. Overall a great fry experience at the Snakebite! Thanks for the amazing french fries.

Details from a rainy weekend away

We headed north for a cozy condo weekend with family. Here are some details of our trip:
 Cinnamon french toast, cozy blankets and fresh pine
 Wrought iron fences, rain covered flowers and ice cream
 Hours of card games, beautiful scenery and my lacy sister

Not many pictures of us due to the fact that, well we were greasy and in sweats most of the weekend.

 This weekend we had a chance to go to the Salt Lake Bees baseball game. And even though neither of us are "big" baseball fans we had a really fun evening. The atmosphere is what it's all about.

In true all - American spirit we even gave in and ate a couple of hot dogs.

Fourth of July

The 4th of July is right up there with my favorite holidays. The fireworks, the bar b que, the warm weather, it's all sort of magical. We had so much fun this year celebrating our nation for two days straight. Get ready for an overdose of fourth of July fun in with the Anderson's. 

Day 1:
On the third we upheld tradition and watched fireworks in my parents neighborhood at Eagleridge golf course. 
 We had a picnic and got everyone together for a fun night.

Best friends Liz and Josh joined us for the fun.
  The fireworks were beautiful and did not disappoint. Eagleridge always does such a good job we loved it.
 After fireworks we headed back to the house and had some fun with sparklers
(my personal favorite part of the 4th!)

Day 2: 

On the fourth we hosted a housewarming party bar b que with friends and family. Adam got to try out the new grill and Todd supervised. Best friend Haley and little sister Ally prepared yummy treats in my new kitchen.
The menu consisted of burgers, bar b que chicken and corn on the cob. For dessert I made a fourth of July inspired cheesecake and there were lots of yummy sides. I still can't get over how good those cherry limeades were...IBC thanks for that!
It was so fun spending the day with such awesome people.
All in all a successful fourth of July! Topped of with a second helping of fireworks.
